Laboratory of Food Quality Control and Hygiene

Laboratory of Food Quality Control and Hygiene provides educational and research activities that cover the field of food quality control, hygiene and safety of food installations.

The objectives of the Laboratory includes the study of factors affecting food quality and safety, development of food standards, food legislation, macroscopic, organoleptic and laboratory testing of edible products, production procedures and relevant risk assessment and hazard analysis, analysis of chemicals and pesticide residues, nutritional value of Greek traditional fermented products, emphasizing in meat-based products as well as in systems ensuring the hygienic preparation of foodstuff. In addition, the Laboratory offers consultancy services to industry, participates in the Post-Graduate program of the Department and offers an MSc degree on Quality Management and Food Safety Management Systems.
